Mango Corn Bread

Mango-licious Recipes, A full menu of recipes prepared with Seagram's Escapes Mango


  • 1 cup Seagram’s Escapes Mango
  • 1 cup SEAGRAMS MANGO 1⁄2 cup buttermilk
  • 1⁄2 cup butter
  • 2/3 cup white sugar
  • 2 eggs
  • 1⁄2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 1⁄2 teaspoon salt
  • 1⁄2 cup mango, small dice
  • 1 corn, kernels only (about 6 ounces)


Pre-heat oven to 350F. In a saute pan, cook SEAGRAMS MANGO until it’s reduced to half, add sugar and butter and stir until well combined. Remove from heat and transfer to a heat safe bowl. Using a whisk add buttermilk and eggs one at a time and beat well. Stir in cornmeal, flour baking soda and salt. Fold in mango and corn. Place in greased pan or muffin tins and cook for 30 minutes. Great with SEAGRAMS MANGO BUTTER!
